Fresas al Vino recipe

Fresas al Vino No need to neglect Mexican food because of fat and calories. Fresas al Vino is the perfect dessert for a summertime celebration. Bursting with fiber and flavor, it’s even better than chocolate!

Serves 4

Ingredients:

3 tablespoons sugar

4 packets Splenda

1/4 teaspoon cinnamon

1 cup red wine (preferably Pinot Noir)

2 teaspoons lime juice

1 pound ripe strawberries, hulled and sliced lengthwise

1 cup mango sorbet or lowfat vanilla frozen yogurt

4 mint sprigs

Preparation: Stir sugar, Splenda, cinnamon and a pinch of salt into wine until completely dissolved. Add lime juice. Pour over strawberries in a bowl and marinate, covered, in the refrigerator at least 1 hour. Serve in teacups or chilled wine glasses over 1/4 cup sorbet or frozen yogurt. Garnish with a sprig of mint.

How to Pick Fresh, Tasty Produce

 here’s something that was shared with us at work and wanted to share it with everyone here.How to Pick Fresh, Tasty Produce It’s that time of year. Produce stands, farmers markets and grocery stores are packed with seasonal color and boundless varieties of fresh produce.

If you’re like me, you stand in front of the watermelons thumping, shaking and sniffing, but with no clue what to look for. Here are some tips for picking some of the best of the best this season.

Watermelon: Look for dense, symmetrical melons with no cuts or shrunken areas. The rind should be dull and have a yellow underside. (That’s where it lay on the ground ripening.) If you slap the watermelon, you should hear a hollow thump. Store it whole in the fridge for up to a week.

Tomatoes: Look for heavy tomatoes with a rich color and no wrinkles, cracks, bruises or soft spots. The tomatoes should have a little “give” when you touch them. If the tomatoes are too soft, they are probably overripe and will be watery. Tomato season runs from June through August. When not in season, you are better off buying Roma and cherry tomatoes; they’ll have more flavor. Don’t put your tomatoes in the fridge. The cold air will destroy the flavor and texture. Let the tomatoes ripen out of direct sunlight for up to a week.

Pineapple: Look for vibrant green leaves. The stem end should have a touch of softness and a sweet aroma. Avoid pineapples if they smell fermented and have brown leaves. If your pineapple doesn’t have a sweet aroma, let it ripen for 2-3 days at room temperature. It should soften a bit. Then refrigerate for up to five days.

Cantaloupe: The stem end should have a smooth indentation. Look for a slightly oval shape, good coverage of netting and a sweet aroma. The blossom end of the cantaloupe should give slightly to pressure. Avoid those with soft spots. Ripe cantaloupes should be stored in plastic in the fridge for up to five days. After that, they will begin to lose their flavor.

Artichokes: Look for a deep green color with heavyset, undamaged, tightly closed leaves. The leaves should squeak if you pinch them together. If an artichoke is starting to open, it’s past its prime. Store artichokes in the fridge in a plastic bag for up to five days.

Asparagus: Look for bright green spears with tight purple-tinged buds. Avoid faded or wilted spears. The thinner spears are sweeter and more tender. Hold the spear and snap it. The woody stem will break off at the perfect spot. To store asparagus correctly, stand it upright with a little water in a tall container. Cover the tops with a plastic bag and cook within a few days.

Remember, beautiful doesn’t always mean delicious. Perfect looking produce is more for looks than taste. Don’t be afraid to pick it up. Heavy, sturdy fruit and veggies with tight skin and peels are telltale signs of freshness. And for best flavor and the best buy, shop in season.

A sliced Carrot looks like the human eye. The pupil, iris and radiating lines look just like the human eye… and YES, science now shows carrots greatly enhance blood flow to and function of the eyes.

A Tomato has four chambers and is red. The heart has four chambers and is red. All of the research shows tomatoes are loaded with lycopine and are indeed pure heart and blood food.

Today’s research shows that when a woman eats one avocado a week, it balances hormones, sheds unwanted birth weight, and prevents cervical cancers. And how profound is this?  It takes exactly nine (9) months to grow an avocado from blossom to ripened fruit. There are over 14,000 photolytic chemical constituents of nutrition in each one of these foods (modern science has only studied and named about 141 of them).

Figs are full of seeds and hang in twos when they grow. Figs increase the mobility of male sperm and increase the numbers of Sperm as well to overcome male sterility.

Serves 4

Ingredients

  • 3 large heirloom tomatoes, chopped into 1/4- to 1/2-inch cubes
  • 1/2 medium cucumber, julienned and cut into 1/4-inch cubes
  • 1/4 cup thinly sliced red onion
  • 3 tablespoons fresh basil, torn into large pieces
  • 3 tablespoons red wine vinegar
  • 1 1/2 tablespoons olive oil
  • Sea salt
  • Coarsely ground black pepper
  • 1/2 whole-wheat baguette, cut into 8 1/2-inch-thick slices
  • 8 basil leaves

Preparation

Toss first 6 ingredients in a bowl; season with salt and pepper; let stand 30 minutes. Drizzle 1 tablespoon liquid from mixture over bread; broil each side until golden; top with 2 tablespoons tomato mixture. Garnish with basil leaves.

    Broiled Tilapia Parmesan


     

    Ingredients:
    1/4 cup Parmesan cheese
    2 tablespoons butter, softened
    1 tablespoon and 1-1/2 teaspoons mayonnaise
    1 tablespoon fresh lemon juice
    1/8 teaspoon dried basil
    1/8 teaspoon ground black pepper
    1/8 teaspoon onion powder
    1/8 teaspoon celery salt
    1 pound tilapia fillets

     

    Directions:
    Preheat your oven’s broiler. Grease a broiling pan or line pan with aluminum foil.
    In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
    Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
    Makes 4 servings.

    Serving Size: 1 serving

    speeding ticket!!

    First of all I want to point out what a jerk this officer was to begin with, so freaking rude the way he talked but anyway. So this was the deal….I was taking my kids to school and we were close to the circle drive there was an old lady in a car in front of us pulling into the drive, where other cars already were, of course she comes to a dead stop and is still in the road. I am behind her I stop, completely, I made a comment about her looking around like she was lost and my son said "that’s my science teacher." She pulled into the drive a little but was still partially in the road but enough for me to go by. I pulled around her from the stop and went about 5 yards, the cop said he clocked me on laser doing 32 in a school zone!! There’s no freaking way my mini van went from 0-32 in 5 yards! I told him "there’s no way I was speeding I was at a dead stop, I had to pull around that lady in front of me because she was stopped in the road," he said "I know but I got you on laser ma’am, and I saw you weaving in and out of traffic" WHAT?!?!?! Seriously, because my front tire went over the freaking middle line by a foot or 2? Seriously?!?! This is some bs! I never speed in school zones, and when people do it ticks me off so why would I be? There were people pulling out from the drive and taking off, I saw 2 cars put their brakes on really fast so I can guarantee it was one of them not me. I am so mad, that’s a $207 ticket. UGH!!!

    food poisoning!! HELP!!!

    Apparently last night when we went out to eat the chicken I had gave me food poisoning! I know because it’s happend before and I went to the dr. Anyway, does anyone know what I can do to make myself feel better??? I’m weak and shaking and can’t function very well today! HELP!!!

    Man!! Have I let myself go BIG TIME!!!! I knew I had put on weight since my new job started in March of ‘08 but I did not realize HOW much weight until I posted these new pics! I am so disappointed in myself. In Jan 2008 I was starting to get a nice stomach, now there are just fat rolls everywhere….so gross! Crazy how much I have changed in a year! Posting these pics are humiliating! Maybe this is what I need though, to stop hiding the real me and face it, deal with it, accept it enough to change it. I don’t want to look like this anymore, I want better for myself, my family deserves better, my health means more. Time to change, not subtle but drastically. No more excuses, no more laziness, enough is enough. I am not accepting this of myself anymore!!

    why no support at home?!?!?!

    Why is it that the people we need and want support from the most don’t seem to help but are quick to criticize? I hope no one else has to go through that because it really sucks! You would think that someone you are married to who likes to workout hisself would be on board with you doing it right? Not my case, not my husband, he criticizes me, tells me I’m lazy, tells me I’m not trying hard enough, makes fun of the videos of P90X and Tony Horton while I’m in there doing my best to do them while he sits on the couch and laughs and pokes fun at everyone on it. It’s so frustrating!!! Does he really think this is motivation or does he care, is he just being a jerk? I have got to where I don’t even want to go to the gym at the same time he’s there and I definitely don’t want to workout at home if he’s there. If I am at the gym and he shows up I quit working out. I just can’t stay motivated to be there. He gets to go to the gym everyday, it frustrates me because we have four kids at home and most my time is focused on cleaning, cooking, and doing stuff for them when I am not at my full time job so when I do get to workout I dang sure don’t want someone being so negative about it. Then he goes and buys shakes at the gym, orders supplements and things but when I go and buy me some protein powder and some Hydroxycut Max he wants to jump all over me about how much money I’m spending on something that’s not even going to benefit me because I don’t try to lose weight. I go to the gym when I can and do the P90x at home, I’ve changed my eating habits, I have lost weight and inches within the last month but does he notice that? He doesn’t even know what I’ve been doing because I try to do what I can when he’s not around, he doesn’t believe that he says "oh whatever, you don’t do crap!" Seriously, why is he being like this? Where’s the support and motivation? He knows I entered the Hydroxycut contest and he just says "I don’t know why you are just wasting time and money you aren’t gonna win" That’s fine I probably won’t win but at least I’m trying. Why would someone be like that to their wife? Am I the only person dealing with this crap? I really hope so because I hate to think someone else has to put up with someone like this everyday it sucks!!!!!!!!!

    Sorry for the dirty laundry, I just had to vent I’m so frustrated!!! I want encouragement not discouragement!!
