Snack-aholics!

Sometimes we find ourselves snacking in between meals, I find it’s mostly when I’m study or am at the movies! Sometimes I reach for carb dense foods like bread (ok mostly bread!), so have created this list of foods to snack on freely on my diet which are super low in calories :D

  • Broccoli
  • Cabbage
  • Cauliflower
  • Celery
  • Cucumber
  • Lettuce
  • Mushrooms

Drinks:

  • Water!! add lemon sometimes for a bit of flavour.
  • Tea with stevia
  • Decaf coffee with stevia

Wondrous Winter Vege Soup!

This healthy soup is a great alternative to salad on those cold winter days! Add chicken, turkey or protein of your choice to make it into a delicious meal.

Ingredients:

* 1.5L Vegetable stock

* 2L Water

* 2 Medium size parsnips

* 5-6 Carrots

*3/4 Cup Chopped leek

* 5 Small Kumara (Sweet potato)

* 2 Zucinni

* 1 Whole celery

* 3 tablespoons of herbs of your choice (eg. coriander, pasley, garlic.)

Method:

Rinse and dice all vegetables. Combine all ingredients except the kumara and zucinni into a large pot.

Cook pot on an element for approximately 45 minutes on high.

Stir, add the kumara and zucchini. Cook for another couple of hours, or until all vegetables are soft.

Enjoy! :)
