Turkey muffins
Ingredients:
8 oz 99% extra lean ground turkey breast
1 cup chopped cabbage
1/4 c. finely chopped green onions
1/2 c. chopped sweet onions
1 cup quinoa (cooked)… this is an OPTIONAL ingredient, especially for those on a low carb diet.
1 cup egg whites
1.5 tbsp fresh garlic
garlic, to taste
fresh basil to touch…
1 tsp. baking powder
8 oz 99% extra lean ground turkey breast

Directions:
Preheat oven to 375 degrees.
Combine all ingredients in large bowl and stir until completely mixed.
Line 8 cups of a 12-cup muffin pan with baking cups and/or spray with nonstick spray. Evenly distribute batter among the 8 cups.
Bake in the oven for 15 - 20 minutes, until a toothpick inserted into the center of a muffin comes out clean. Allow to cool and then enjoy!
eat 4 muffins to satisfy the protein and carbs for one meal!

can i add turkey sausage to the mix? how bad is the turkey sausage that sits in the supermarket right next to the ground turkey breast?

I was super bored with canned chicken and spinach and I had the day off so I decided to whip some of these up! They were delicious and you gotta love the healthy dose of fiber from the cabbage. This is pretty much a perfect little meal nutritionally AND taste wise (which is no easy feat) Good thing I made a double batch. My boyfriend and mom both loved them, and now I have a bunch in the freezer for the coming week!
