Just call me "Betty Crocker"
After being inspired by a good friend who is also a health/fitness
fiend and my self-proclaimed nutritional fairy godmother (who doesn't
need one of those?!) I embarked on a whirlwind of cooking.
The result: a batch of pumpkin/applesauce muffins made with no sugar/wheat
in them (just a tbsp of honey + involved fruit) and a homemade loaf of
Ezekiel bread(surprisingly easy). I'm also pleased with the discovery
that mashed cauliflower can stand in as a pseudo mashed potato
substitute(even if it sounds gross on paper) and with the grilled
zucchini and eggplant I prepared that awaits my consumption. Healthy
snacks and food all ready to go is definitely a good way to stay on
track and avoid any temptations. Well, next to having a personal chef
and executive assistant that is (any takers?!).
At this rate,
people are going to start think I care about food when in fact I often
forget to eat.
