Killer Chicken Cheese Steak

Ingredients:
- Whole grain hot dog buns
- 4 boneless, skinless chicken breasts
- Olive oil
- 2 white onions, cut into slivers
- Sea salt and ground black pepper, to taste
- Provolone cheese sliced
- Ketchup
- Hot pepper rings, to taste (optional)
Instructions:
- Preheat oven or toaster oven to 400 degrees.
- Cut pieces of aluminum foil a few inches larger than bun. Wrap bun completely in foil.
- To shave chicken, hold sharp knife at a 45-degree angle and cut slivers from breast, tearing it until shaved. Cut thinner than if just sliced.
- Warm bun in oven for 10 minutes.
- Heat oil coated pan on medium to high heat. Add onions and cook for about 4 minutes or until tender and starting to brown. Remove from pan and keep warm. Add chicken and season with salt and pepper. Pull chicken apart to cook evenly. Keep cooking until a bit browned and juices run clear. About 5 minutes. Remove from heat, add onions and stir together evenly.
- Unwrap bun and open it. Foil will be HOT so be careful. Add cheese, followed by chicken mixture. Top with ketchup and hot pepper rings if desired.
Note: I totally stole this recipe from a cooking magazine. I changed it a bit to make it more suitable to my family and it was a complete hit. It takes from start to finish about 20 minutes so it is great for a quick meal idea. Each Chicken Cheese Steak is approximately 370 calories, 33(g) carbs, 33(g) protein, 15(g) fat. SOOOOOO yummy!
