BREAD & more bread

After making bread a few times using tried recipes, I tried making sweet bread & buns for my girls who prefers "nicer" bread today.  I added an egg and used soy milk in place of water.  I continued using butter (since my little one although allergic to cow’s milk can tolerate it) as per the recipe.  I had to add about half a cup of flour to the 3 cups it called for since I had added more butter and the egg to make a manageable dough.  I also added an extra tablespoon of sugar to the 2 tablespoon, some honey and an extra teaspoon of salt to the 1 teaspoon.  The bread turned out great!!  I don’t know if it was cos of the egg or what but the bread came out with a thicker, crumblier and sweeter crust.  I used a cold oven instead of the preheated oven which "professionals" prefer and I proofed the dough in a warmed oven.  Prior to making the dough I heated up the soy milk with the sugar & salt and added a couple of teaspoon of yeast.  That was left to stand for about 10 mins for the yeast to "eat" and grow….(now here’s hoping my fat cells won’t grow like those yeast cos they were really amazing to watch!!).  When the dough was placed in the cold oven waiting for the temperature to pick up I sat and watched the final bloom of the dough..it is nice to watch !  :)

Ah, YES! The buns were a hit with my girls came back not for seconds but more!!!  My finicky eaters, I love them!!!  I haven’t managed to test the loaf I made from the same dough as it is still hot.  ;)

p.s. I last checked …they sneaked back into the kitchen for yet some more …looks like they may be fussy at dinner time….lol!!

I attempted to make “diet bread” from the box.
This was the result.
Bread was good but apparently I missed greasing a part of the pan.  LOL

Today …
after much pestering from my lovely girls,
I made muffins from the scratch…
yup…got a recipe off the internet and tossed in a handful of rolled oats …
yummy cranberry muffins!!!

BREAD & LITTLE GIRLS

I have been feeling a lot better mentally than I have for quite a while.  Reason being, I changed my routine.  No, I am not working out more.  But instead I am spending more quality time with my girls.  Not very much more than usual but rather doing things together instead of doing things for them.  Like the time I first attempted to make "diet" bread from a box.  They didn’t really like squishy dough stuck on their fingers but they enjoyed the fact that they get to "help" mummy with kneading the dough and watching the dough rise.  Today I tried making white bread from scratch with a recipe off the internet.  Not because I want to have white bread but because my little girl said she wanted "soft" bread and not "hard" bread like the one I made days ago.  Her eyes lit up when I told her I was going to make them today.  She then confided that she likes me to make bread cos she knows I am making it for her & her sister.  In other words, she was trying to tell me she appreciate my efforts.  I let her knead and "throw" the dough  about.  We had fun.  She checked on the dough rising.  She was excited when it was finally out of the oven.  And although she apologetically said it wasn’t as good as the ones from the bakery, she ate quite a bit of it.  It wasn’t that bad, lol.  It was actually good.  But I guess it just wasn’t sweet enough for her…she loves buns which has higher fat & sugar content…and I didn’t allow her to flavor her bread with too much salt…yeah she loves salt!!  I think she was disappointed it wasn’t "square" slices cos I don’t even own a loaf pan!!  She did say she wanted me to make soft sandwich bread  ;)   Her sister on the other hand finally told me she was happy mummy knows to make bread and that she liked both the high fiber bread I made the other day as well as the white bread today.  :)
And even if I still do not lose the weight I am trying to lose….there is always tomorrow ….or next week.. what is important now is that there are smiles on my little girls’ faces and my mental state of mind.  :)

p.s. little girls said ( a little sadly ) that they wished I would make cookies….and cupcakes..

I finally cooked dinner after more than ONE year.  Sure, you must be muttering under your breath….

For me, it shows that I am gradually gaining control of myself after a year of anti depressants and still continuing with therapy.  :)

I know this has nothing to do with training.  But after weeks of pestering from my girls, I decided to cheat and made "Belgian" waffles from bread, butter & honey using the waffle iron.  Yup, not from the scratch.  I have been studying the recipe for Belgian Waffles and noted the similarity in making bread dough.  Today I tried it out, buttered the sandwich bread on the outsides, place one with the butter facing the iron and drizzled honey , placed an unbuttered piece of bread , drizzled some more honey and topped up with yet another slice of bread butter on the outside, close the wafer maker and…voila!!!  Tasty waffles!!!!  :)
