Shrimp a la ‘me’

Who said that bodybuilder’s (or a health-conscious person’s) dishes must be dull-looking? I cooked up myself a shrimp dish that looked and tasted great! But before I go on, I must mention that I used the freshest ingredients, that in my opinion made all the difference in the world. I got them at a local produce market called ‘Hillbilly’s Produce Market’. Awesome produce at very attractive price.)

Most folks would use pasta instead of potatoes. That’s cool. I’ll use that next time. This time I had some tasty new potatoes left over.

So, what went in:

1 med. yellow tomato (don’t know the name) - chopped roughly

13 jumbo shrimp (frozen, precooked)

2 med. white NEW potatoes cubed finely

Spices: Tony’s and Tobasco

Garnish: green onions

In a saute skillet (with some olive oil in it) combine tomatoes and shrimp…season to taste and let saute on med. high heat for about 7 minutes, turning shrimp over couple of times.

In the meantime microwave potatoes and cube them. Then either throw them into the skillet with tomatoes and shrimp or reserve then on your serving plate. That’s what I did. I just added the tomatoes and shrimp over the potatoes later.

It came out nice’n’spicy hot — just the way I like it! Took some pix for you, too.

Made this for my lunch meal today. My 10 year-old tried it and approved, so I am posting the recipe here for all of you, crazy bodybuilder ladies:))) (Including myself)

I cooked the eggs on the stove top  in my smallest Emerilware non-stick frying pan. Cut up some turkey cold cuts into it too. Threw some crushed red pepper flakes and cayenne. Sometimes I drizzle in some Tobasco (!)

1. I toasted my Ezekiel bread (there are more than jusy one veriety of this bread out there. I’ll try to get the sprouted one this weekend).

2. Spead some Creole mustard on the bread.

3. Put a layer of fresh baby spinach on.

4. Put the cooked eggs on top. (You will have more eggs than a slice of bread can handle, so I put 1/2 of eggs on a side.

5. You could add some green onions on top or smth. else.

If you are going for P40/C40/F20 ration add another slice of bread. If you’d rater add some healthy fats to this put a slice of avocado. (Like gymfreak713 suggested)

Grilled Salmon Sandwich Recipe

One of my favorites. Tastes great and excellent for ya! See the macros below. (I added almonds just for the shot. Salmon has enough fats in it for my lunch)…..

Salmon Fillet (by SeaQueen) - 4oz
Ezekiel 4:9 Sesame bread - 2 slices
Cottage Cheese (2% milkfat) by Breakstone - 0.5 Tbsp
Honey Mustard Light Dressing - 1 Tbsp
Onions, young green, raw - a sprinkle

It soooo easy to make. Just throw all the ingredients into the blender, add a cup of ice and  blend. Great for after workout. Hold the berries and you get a low-carb high protein shake that’s perfect for later in the day.

Of course, you can change substitute soy milk with reg milk.

A Quickie

I was a ’shoulders’ day today. Totally lost track of time at night, and by the time I got to the gym (there was a bad wreck on my way, too) I had 30 minutes to my name:(  I mustered all the energy I had (and I had plenty of it - thanks to eating a nice solid pre-workout meal) and plunged into the world of impossible!

In 15 minutes I made my shoulders cry for mercy. Then I got on a treadmill and did a 15 minuted HIIT…jogging at 5mph…and then sprinting at 8mph.

That was the quickest and most productive workout ever, I tell ya. Anyway, I expect my shoulders to grow by tomorrow morning;)

Climbing Mountain Trails

Monday, May 28th, 2007

Memorial Day. Hubby’s home. We took our girls and took off to Blue Ridge Parkway. Took us an hour to get there. Spent over an hour climbing one of the ‘moderate’ trails. Wow! Talk about a cardio workout!

No other physical exercises today.

Leg Day

Saturday, May 26th, 2007

In the morning I felt an onset of a cold. Around noon I felt great and went to the gym. Was a great leg day. Good thing I felt good. Now, it’s much worse. Can’t breathe and sneezing all the time. On Sunday I’ll take it easy.
