mmmm delicious dry chicken breast...
The OREO called to me at lunch time, not to mention last night where they were DOUBLE STUFFED, omg.... and I just decided it wasn't worth it. I have so far yet to go in my goals, and I dont want to put back on the 9 lbs I just lost. I must be getting better, because even though I'm not at the gym today, and my morning was thrown off since I had somewhere to be at 830AM, I'm making (relatively) sane diet choices.
I ran out of the house without eating, big no no, and I forgot my little Fibre One breakfast bar, too! Drat! Oh man, was I crabby... but rather than give into a breakfast sandwich from Dunkin, which would have been right there on the way home, I waited, but then unfortunately I sort of had lunch and breakfast all together, finishing off my spinach, tomato, avocado salad w/ tuna and lemon... with a bowl of Kashi Go Lean cereal and almond milk... whoops! so ya, lesson learned, i really need to make sure I grab SOMETHING on the way out the door. I have EAS lo-carb ready to drink shakes, so there's really no excuse. At least calorie wise, thats the same food I would have eaten anyway, just all around 11, 1130AM instead of cereal at 730/8AM and salad at 11/1130AM.
After biking around downtown this afternoon, and a 20 min chair massage, I cleaned my floors and am "enjoying" my Dinner at 5/530PM. I had a little organic cucumber and a glass of fibre while I was cooking my chicken breast w celery. THIS is a sign I am getting better, because the chicken is kinda dry and fairly plain by my standards. I just seasoned with a bit of garlic (salt) and pepper, dash of lemon, and a few dashes of habenero hot sauce., and slowly sauteed w EVOO, water and celery. So it's actually really simple, and I'm sincerely enjoying the plain-ness of it.
Seriously, I need to go easy on the olive oil, because my one complaint about my own cooking this evening is, why did I use so much oil? Drier the better; bring it on! I just visualize my tight, toned tummy coming through with this awesome 6 pack! I guess I was enjoying the steak, since I just quickly cook it rare and it stays nice and juicy, but I can't very well eat rare chicken. :P i will also be phasing out the garlic (salt) and trying to sub in more salt-free seasoning like Bells and other fresh herbs.
ANY OTHER SUPER-SIMPLE, ULTRA-CLEAN RECIPE SUGGESTIONS????

It's easy to overdo it on the olive oil. One tablespoon already has over 100 calories. I switched to using pam cooking spray. MUCH less calories that way. I only intentionally add a tiny amount of olive oil to some meals to make them stay longer in my stomach (such as adding a 1/2 tsp to my oatmeal before cooking it). But it's definitely easy to go overboard on olive oil if you are using it to grease your pan. Beware of that.
You can buy garlic powder instead of garlic salt. That will reduce your sodium.
I also substitute tilapia for chicken breast to help with the variety. Tilapia has less fat than, say, salmon, and although it's the good kind of fat, more fat means more calories, so I only occasionally eat salmon until i'm ready for the weight gain phase, where then I will likely be eating more salmon then.
I'm with mychee, I use cooking spray quite a bit but dietary fat does help you stay fuller longer. At least it does me. Everything in moderation :)
As for the meals, make sure you have healthy choices at work in case you are running late in the mornings...things like that. Planning is key.

I may have to go ahead and get a spray at the store today then and... well I had been thinking I would just use up the garlic salt and then switch to salt-free but... you know, why wait? So there! i did it. I plopped it in the garbage. i actually HAVE plain ground garlic and curry and a lot of other seasonings, i have just been being a baby because salt is a huge weakness for me. worse than sweets by a long shot!
Thanks, mychee, too I have some amazing wild caught fish steaks in the freezer to get to, as well, and I will bear in mind that salmon makes a great gainer! haha
