Food Creativity (Must-try recipes included!)

July 28, 2009

I decided to get a little creative with some of my food…you know, spice things up a little. I love having low-carb snacks before bed, so I developed these…they’re amazing, and I hope some of you try them and then tell me how you guys like them!

FLAX PUDDING

- 1/4 cup of milled flax seeds

- 1/4 cup of water
- 1 egg

- Any other add-ins you want (I like using nuts, nut butter, fruit, and sugar-free syrup)

1.) Beat all the ingredients together in a microwavable bowl.

2.) Put into the microwave and cook for 20-30 seconds. Make a well in the middle of the mixture and put whatever add-ins you want, then microwave for another 20-40 seconds, depending on what you put inside.
CHOCOLATE PROTEIN MERINGUES

- 4 egg whites

- 1/2 tsp. cream of tartar

- 1 tsp. vanilla

- splenda (to taste. Depends how sweet you want it, or what you’re putting inside the meringues)
- sugar-free pudding, or fruit

1.) Beat egg whites until soft peaks form. Add in splenda, vanilla, and cream of tartar and beat on high speed until stiff peaks form. Drop by spoonfuls onto a baking sheet, and bake in the oven at 250 degrees for 25-40 minutes (depending how hot your oven gets) or until golden brown on top.

2.) When finished, remove from heat, and dust lightly with cinnamon. After they’re finished cooling, gently cut the meringues in half and stuff them with fruit, sugar-free pudding, or whatever else you can think of! I love putting cottage cheese and a little Walden Farms chocolate syrup inside. YUM!

(This has become an evening staple for me. Very little carbs, and high in protein)

Last little thought to leave you all with…whoever has NOT tried oatmeal with chopped fruit and Crystal Light has not lived ;) . Has to be the most amazing oatmeal recipe I’ve made since adding peanut butter. It’s a must-try. Trust me.

Now you all know how I control my sweet tooth! Let me know how you like em ;) .

Self-Control is a Gift

July 27, 2009

It’s a little hard to understand, even for me…but after not ingesting crap every weekend, I feel so much better about everything. Don’t get me wrong, it’s not like I’m obsessed and driving myself insane, I just really don’t feel the need to have cheat meals anymore. Does that sound weird? I might have something to "cheat" on, which could be some sushi or a big steak and baked potato or something, but when it comes down to it, I don’t enjoy guzzling ice cream like I used to. That’s the thing, on Saturday I would usually pick myself out something really "dirty" and wash it down with a dessert, but I just don’t feel that urge anymore. I haven’t had a cheat meal for a month, and it feel fantastic…when I say "cheat" I mean sugary things, or things that REALLY aren’t good for me at all. (fried foods, foods filled with trans fat, etc.) When it’s something on the healthier side, just in a portion size I wouldn’t normally have, I think it’s much more satisfying, and I feel a lot more fulfilled, and like I’m really treating my body right. Some of my non-lifting (and even some fitness-minded) friends don’t understand it, but I don’t expect them to. It’s sort of an agreement I’ve made with my body, and it’s what works best for us :) .
However, my birthday this is ALWAYS considered close to being a holiday, so I might allow myself a little Hagen Daaz and home-made pizza ;) .

Happiness in little gains (:

July 24, 2009

You gotta have it.

That being said, I’M UP 3 LBS!!! And leaner than ever!

Never thought I’d be happy when I saw the scale go up :P . A year ago I probably would have flipped and jumped on the treadmill for 3 hours…I’m glad I’m past that stage.

TIP OF THE DAY:

For any guys reading this who know what I’m talking about, please don’t try to impress the ladies at the gym by asking them if they want to "feel your bicep". It really isn’t that great of a way to introduce yourself. (:

Have a great weekend, everyone!

Funniest thing about BodySpace…

June 7, 2009

Just wanted to share a little of my heart with you…

…does anyone else find it amusing, that whenever someone takes a quad/leg picture, they pull down their pants, but leave them at their ankles?? Wouldn’t it look less awkward if you just…take them off and out of the view of the camera, and THEN take the picture?

Just saying, lol…

Anyway, hope everyone has a fantastic weekend.
