FitDiva’s Curried Chicken w/Veggies!

Tired of that bland, plain chicken? Well have no fear FitDiva is here!! There is no reason why your meal cannot be healthy AND delicious!  I got a recipe that is sure to sex up that boring chicken breast of yours.  Want something hot,  tasty, and good for you? Well baby click print, gather the ingredients and meet me in the kitchen to make you a healthy, delicious, adventurous dinner!

 

 1 tablespoons curry powder
3 cloves of chopped garlic
1 small sliced onion   
Non stick spray
2 TBSP of olive oil
4 Chicken Breast
Small piece of Habanero pepper (HOT) or Poblano pepper(MILD)
2 tablespoons of minced chives
1 diced tomato
1/4 cup 2% milk
½ teaspoon of coconut extract  
1 cup water
Low sodium Salt and Pepper
2 cups of Broccoli florets
1 Sliced Red Pepper
Sprinkle with ground Cumin
Serving of Brown Rice (Boil in bag is convenient and quick)
 

Spray skillet with non cook cooking spray.
Heat the skillet over medium high heat.
After skillet is hot add in your onions and garlic and let it soften. (Careful to not let it burn! Burnt garlic tastes bitter)

In the meanwhile season chicken breast with low sodium salt and pepper and in separate bowl mix milk and coconut extract together for my version of “healthy coconut milk”.  
Remove onions and add 2 TBSP of olive oil.
Add the seasoned chicken breast allowing them to brown for 4-5 minutes on each side.
Add your chosen Habanero/Poblano pepper, chives, and diced tomato.
Stir periodically. Add the “healthy” coconut milk to skillet.
Lower heat a little, add broccoli,  and allow dish to simmer for 15-20 minutes. Continue to check and turn the chicken breast.
**If you want a “gravy” after 10 minutes add cup of hot water to dish.
While dish is simmering, prepare brown rice.
Once complete serve dish over brown rice, sprinkle with cumin and enjoy!
 

 

That PMS Thang and other random rants!

Ladies HELP…I am craving everything right now. Brownies, ice cream, Kit Kat you name it! I haven’t given in cause I am afraid I will overdo it.. I was doing just fine until SHE came..you know her, that irritating helfa that stops by every month. It’s hard to workout when you are thinking about frickin’ Cold Stones..lol Oh I am thinking if I pray hard enough my Muscle Milk shake will taste like ice cream to me. It’s actually delicious… yet not doing it for me today. Do you guys have any tricks to help the craving and the inhumane bloating??

Sorry I needed to rant and rave for a minute but I am very proud of myself today…my job is the worst place for a fitness minded person. I can count on one hand the people I see actually eating healthy. One lady was eating a salad but it was covered in Thousand Island Creamy dressing..yuck! I am new there so people have already labeled me the health freak..and not in a complimenting way but that’s fine…I’ll be that. Oh yeah apparently I have the cooties too because gasp I LOVE to work out early in the morning before work and a little bit afterwards too… What’s sad is before I was ready to get back into shape and take back my health and body..I thought the same way too! Shame on me..

My focus is so sharp, my determination is strong, and everyday it gets easier and easier to stay on track (sans my emotional fight today), I picked up my NO Xplode today and tommorrow morning I will be using it for the first time. I hope it works for me the way everyone else says it works for them. I’ve been jogging in the morning to increase my endurance and just to mix it up cardio wise. I start Muay Thai training in 2 weeks so I am looking forward to that..a new way to challenge myself I guess that is why I struggled so much before.. I got bored!

The Diva’s Oatmeal Pancakes!

I am in the mood to share a recipe with my bb.com family..give it a try in the morning. It’s delicious, easy to make, and GOOD for you!!! Ok I don’t really measure cause I have made them for a long time. Plus depending on your fitness goals you may have to adjust the amount of oatmeal and/or egg whites…

Diva’s Oatmeal Pancakes

1/2 c. dry Old Fashioned Oatmeal (Instant ok too)

2 Splenda packets

Capful of Vanilla

4 Egg whites or Equivalent Egg Substitue

1/2 c. cottage cheese (great for moisture)

2 Dashes of Cinnamon

Dash of Nutmeg

Non Stick Cooking Spray (Olive Oil or Butter)

Optional: Sugar Free Syrup and/or Fat Free Spray Butter (I Can’t Believe It’s Not Butter tastes the best) and/or Berries!!

Instructions:

Heat skillet (medium high) and add cooking spray

Meanwhile add all ingredients in a mixing bowl

Make pancake shaped patties and add to hot skillet

Brown on each side for about 2 minutes (You can tell it’s done b/c it will be firm)

Serve hot and enjoy!

**Since this is a basic recipe don’t be afraid to experience. Some of my favorites are adding pureed sweet potatoes, or pureed bananas. Also adding berries into the mixture or raisins and almonds on top for variety!
