No Excuses.. just a change of plans

My son has been sick since yesterday. After a long night of fighting fevers, vomiting, congestion, and irritability I am beat. So going to the gym this morning is out of the question. Does that mean I’m going to sit on my butt and do nothing? Hell no I answer..lol I’m going to get him comfortable with his juice and oatmeal, put Elmo on and make sure he is surrounded with lots of pillows jus the way he likes. Steal a few kisss and while he is relaxing his room I will be in the loft with my dumbbells doing my chest workout with my Swiss ball (since I don’t have a work bench) followed by my ab workout consisting of some floor exercises and my weighted hula hoop! Eat my small meals throughtout the day. I will have to do my cardio much later than usual but I will have my mom watch my lil man while I squeeze in my HIIT on the eliptical this evening. The point is while today will be exhausting and I have to tweak a few things I will get my workout in because I cannot take my eye off of the prize. Unexpected things will occur it’s now you react and plan around them that separate you from the average joe!

New Recipe: Flaxseed Encrusted Tilapia

Hello all Bodyspacers! It’s been awhile since I blogged so since I am home with my sick kid today I thought I’d share what I had for dinner last night. It’s easily prepared and completely quickly. Loaded with Omega 3, busting with flavor this recipe is a Winner! After you make it shoot me a note and let me know how it worked for you! Until my next installment…eat clean, train hard, and embrace your current successes!

   Flaxseed Encrusted Tilipia

2 Pieces of Tilapia

Ground or Milled Flaxseed

Whole Wheat bread crumbs

Low Sodium salt (optional)

Cracked Pepper

Egg Whites

Skim Milk

Paprika

Garlic Powder

Onion Powder

Spinach & Arugula leaves

Nonstick cooking spray

(2) Bowls

Skillet

Fresh lemon slice (optional)

Directions:

Spray skillet with cooking spray and heat on medium setting. In first bowl mix all dry ingredients together. In the second bowl mix all of the wet ingredients. Evenly dip tilapia in the egg mixture then coat both sides in the flaxseed meal. Place in skillet and allow it to brown (approximately 2-3 minutes) on both sides. Serve on a bed of spinach and arugula with fresh lemon slice for added flavor!

FitDiva’s Curried Chicken w/Veggies!

Tired of that bland, plain chicken? Well have no fear FitDiva is here!! There is no reason why your meal cannot be healthy AND delicious!  I got a recipe that is sure to sex up that boring chicken breast of yours.  Want something hot,  tasty, and good for you? Well baby click print, gather the ingredients and meet me in the kitchen to make you a healthy, delicious, adventurous dinner!

 

 1 tablespoons curry powder
3 cloves of chopped garlic
1 small sliced onion   
Non stick spray
2 TBSP of olive oil
4 Chicken Breast
Small piece of Habanero pepper (HOT) or Poblano pepper(MILD)
2 tablespoons of minced chives
1 diced tomato
1/4 cup 2% milk
½ teaspoon of coconut extract  
1 cup water
Low sodium Salt and Pepper
2 cups of Broccoli florets
1 Sliced Red Pepper
Sprinkle with ground Cumin
Serving of Brown Rice (Boil in bag is convenient and quick)
 

Spray skillet with non cook cooking spray.
Heat the skillet over medium high heat.
After skillet is hot add in your onions and garlic and let it soften. (Careful to not let it burn! Burnt garlic tastes bitter)

In the meanwhile season chicken breast with low sodium salt and pepper and in separate bowl mix milk and coconut extract together for my version of “healthy coconut milk”.  
Remove onions and add 2 TBSP of olive oil.
Add the seasoned chicken breast allowing them to brown for 4-5 minutes on each side.
Add your chosen Habanero/Poblano pepper, chives, and diced tomato.
Stir periodically. Add the “healthy” coconut milk to skillet.
Lower heat a little, add broccoli,  and allow dish to simmer for 15-20 minutes. Continue to check and turn the chicken breast.
**If you want a “gravy” after 10 minutes add cup of hot water to dish.
While dish is simmering, prepare brown rice.
Once complete serve dish over brown rice, sprinkle with cumin and enjoy!
 

 

That PMS Thang and other random rants!

Ladies HELP…I am craving everything right now. Brownies, ice cream, Kit Kat you name it! I haven’t given in cause I am afraid I will overdo it.. I was doing just fine until SHE came..you know her, that irritating helfa that stops by every month. It’s hard to workout when you are thinking about frickin’ Cold Stones..lol Oh I am thinking if I pray hard enough my Muscle Milk shake will taste like ice cream to me. It’s actually delicious… yet not doing it for me today. Do you guys have any tricks to help the craving and the inhumane bloating??

Sorry I needed to rant and rave for a minute but I am very proud of myself today…my job is the worst place for a fitness minded person. I can count on one hand the people I see actually eating healthy. One lady was eating a salad but it was covered in Thousand Island Creamy dressing..yuck! I am new there so people have already labeled me the health freak..and not in a complimenting way but that’s fine…I’ll be that. Oh yeah apparently I have the cooties too because gasp I LOVE to work out early in the morning before work and a little bit afterwards too… What’s sad is before I was ready to get back into shape and take back my health and body..I thought the same way too! Shame on me..

My focus is so sharp, my determination is strong, and everyday it gets easier and easier to stay on track (sans my emotional fight today), I picked up my NO Xplode today and tommorrow morning I will be using it for the first time. I hope it works for me the way everyone else says it works for them. I’ve been jogging in the morning to increase my endurance and just to mix it up cardio wise. I start Muay Thai training in 2 weeks so I am looking forward to that..a new way to challenge myself I guess that is why I struggled so much before.. I got bored!

The Diva’s Oatmeal Pancakes!

I am in the mood to share a recipe with my bb.com family..give it a try in the morning. It’s delicious, easy to make, and GOOD for you!!! Ok I don’t really measure cause I have made them for a long time. Plus depending on your fitness goals you may have to adjust the amount of oatmeal and/or egg whites…

Diva’s Oatmeal Pancakes

1/2 c. dry Old Fashioned Oatmeal (Instant ok too)

2 Splenda packets

Capful of Vanilla

4 Egg whites or Equivalent Egg Substitue

1/2 c. cottage cheese (great for moisture)

2 Dashes of Cinnamon

Dash of Nutmeg

Non Stick Cooking Spray (Olive Oil or Butter)

Optional: Sugar Free Syrup and/or Fat Free Spray Butter (I Can’t Believe It’s Not Butter tastes the best) and/or Berries!!

Instructions:

Heat skillet (medium high) and add cooking spray

Meanwhile add all ingredients in a mixing bowl

Make pancake shaped patties and add to hot skillet

Brown on each side for about 2 minutes (You can tell it’s done b/c it will be firm)

Serve hot and enjoy!

**Since this is a basic recipe don’t be afraid to experience. Some of my favorites are adding pureed sweet potatoes, or pureed bananas. Also adding berries into the mixture or raisins and almonds on top for variety!

Strep Throat..AGAIN! But I dropped 5 lbs! LMAO

Well my Christmas was great I got a slammin’ new Coach purse (the ladies will feel me on this) as well as some other great gifts and the morning after I woke up with f@#in’ strep throat! I get it every other year no BS and I wash my hands, use antibacterial soap, avoid people with phelm being shot from their nose and mouth and it doesn’t matter it finds me! Perhaps it is the antibacterial soap? (I was reading that after awhile it does more good than harm because it gets rid of the helpful AND harmful germs!) Hell I even took Airborne..no avail. I ate my first solid food meal today the first since Christmas day YAY! 

On the upside I did break my brief plateau and lost 5 of many more pounds in my fight to my perfect body! Well no plans for the New Year just getting better and watching the countdown shows..no big whoop I’ll have plenty of milestones to celebrate this year and Superbowl parties to attend in Feb.! Glad I live in AZ..hehehe Until 2008!

Santa told to lose weight? R U Serious..

In the spirit of the holidays I decided to write this blog to get the bb community’s opinion. Apparently the U.S. Surgeon General has told Santa Claus he needs to lose weight because he is a bad example to children! http://www.foxnews.com/story/0,2933,314641,00.html

Uhm..geez how do I put this..Parents YOU not SANTA is responsible for teaching your children healthy eating habits, stay active as a family, etc. We (parents) are supposed to be the role models not St. Nick..is society really trying to tell me that if Santa is skinny the kids will slim down? Not if Momma & Daddy are eating pizza and Mikey D’s every night because they are too "busy". Santa could lose 10 lbs and then what? If the parents aren’t educated or willing to cook healthy portion appropiate sized meals then there will be no change in America’s childhood obesity problem. Get your kids off of the computer or PS3 and enroll them into some group sports or just as a family go walking in evening. It is time we take responsibility for ourselves and our children’s weight issues…Santa is supposed to eat his cookies and deliver the damn toys! Weigh in BB.com…what do you think about Jolly St. Nick’s slimdown request?

WTF was I thinking?

It’s been awhile since I’ve been on but I love this site! Great for motivation..which I am lacking right now. I just ate chicken and I feel like crap. Cause it wasn’t grilled or baked..yes I ate a piece of FRIED chicken! (Screams in the background) I rarely eat fried chicken but I thought I eat so clean I’ll eat one piece. Now I feel like I am gonna puke..damn grease sitting in my tummy. Honestly I want to kick my own azz… LOL See if I can remember this sh*@ty feeling when I eat poorly it wouldn’t be an issue! What’s funny is Tosca Rena (Oxygen’s The Eat Clean chic) is on the cover of my fav mag shaking her head in disappointment or err is that conscience? Either way I am tripping I guess the best thing to do it forget about it and make the right choices at dinner…which will be a very healthy fat free salad to kinda balance the damage done earlier. I have so much stress I shouldn’t let this weigh to heavily but I tell you want I will remember this whack feeling and will pass on the garbage next time around!

 

Billy’s got my back…

Ok so it is no secret I am no cardio bunny…especially on the cardio machine! (Ok I kinda like the epillitical) BUT I was at the gym this morning and about 5 minutes into my cardio how in the hell was I gonna get an hour in?  I realized that I am not feeling the treadmill, the bike, or the epillitical trainer today. I was only 5 minutes into it and was over it! But I had a great idea.. lol So I grabbed my water bottle, towel, and keys and yep I got into my car and drove home. So now before you all start scolding me I went home and I pulled out my Billy Blanks DVD..Yep I forgot that I LOVE to TaeBo so I am taking it back a little bit. I have them all..The very first series all the way up to whatever one he is showing on his newest informal!  So this week I am gonna do my cardio at home with Billy and hit the gym for my true love, the weights. This will keep it fresh and new and I already know it threw my body into shock. Plus I feel like I can beat up anybody..lol I will be hurting tonight. So if you all need a change and if you got Billy around the house pop him in and get a really good workout!
