So today I tried quinoa for the first time. (ONLY complete vegetarian source of protein) I’ve been putting it off because it looks so much like the dreaded couscous. Anyway, it was in a Southwestern style dish with black beans, corn, bell pepper, onion, cumin, etc. All I’ve got to say is…Whoa! It was freaking awesome! I got the stuff at the Whole Foods deli for $8.99lb. I looked over the ingredients list and I’m going to make it. It’s REALLY easy! Use cooked quinoa, 1 can of Kuners black beans in chili sauce and cumin, and a can of Kuners Southwest style corn.. Mix together over the stove and simmer until the sauce reduces down. Freaking awesome! Yipee!!!
