Recipe: Tom’s Chicken Ranch Wrap

Here’s one I figured I’d share with you really quickly.  This is a great treat for those mid-morning and mid-afternoon meals, or when you don’t have a lot of time.  I can’t recommend these puppies enough.  On this one, I’ve got nutritional info for you, but it’s based on specific brands.  Obviously, you can change brands all you want, but that will change the nutritional info, so adjust accordingly.

Need:

Flat Out Flat wrap bread

3 ounce boneless, skinless chicken breast (pre-cooked)

2 Tablespoons of Hidden Valley Ranch Fat-Free Ranch Dressing

1/2 cup Romain Salad Fixings (I prefer pre-cut for ease of use…plus, it has carrots in it)

Chop chicken breast into smaller than bite sized pieces.  Place in Ziploc bag. Add in Romaine lettuce and salad dressing, then close bag.  Mix contents until salad dressing coats all chicken and lettuce, then place on the center of wrap bread, making sure to leave about 1.5 inches of space from top to bottom.  I personally always place it so the stuffings go across the narrow part of the oval-shaped bread.  Then, roll it up and enjoy!

Now, I made one of these a few minutes ago, and it took about 5 minutes from the time I started chopping to eating.  It’s quick and easy!  Here’s the nutritional info for those who need it (like me)

  • 259 Total Calories
  • 6 gr of fat
  • 26 gr of carbs
  • 35 gr of protein

Now, this might not be enough for some of you folks, but in that case just whip up two of them!  You’ll be thrilled at the taste, and it’s a good use for left over chicken breasts.  I hope you all enjoy these bad boys as much as I do!

Recipes for Fitness: Tom’s Oven-Fried Chicken

I figured that, since we’re all trying to lose weight, or gain lean muscle, or something similar where we’re trying to eat healthy, it might help if we share a few recipes.  Here’s one of my family’s favorites, whether we’re eating healthy or not!

Oven-Fried Chicken

Boneless, Skinless Chicken Breasts (as many as you’d like to cook)

4 egg whites

Progresso Italian Bread Crumbs (Or you can make your own with finely crumbled whole wheat bread and Italian seasoning)

Take four eggs and separate whites into a bowl.  Place bread crumbs in bowl or Ziploc bag.

Dip each chicken breast in egg whites, making sure whites completely coat breast, then dip into the breadcrumbs, once again making sure breast is completely coated and place on a greased cookie sheet (I suggest Pam spray).  It’s OK for them to touch slightly.  Place in the over an 400 degrees for about 30 minutes, or until done (clear juice comes out when poked with a fork).

Now, this might not be a great choice for low-carb dieters, since the crumbs will add some carbs to the chicken, but for many of the rest of us, this is a great tasting option.  Also, some of you may not like the Italian Bread Crumbs (philistines) but it’s easily substituted for any other kind of bread crumbs, or even Corn Flakes can be used!
