This IF/IE stuff really works!!

Tuesday, March 31st, 2009

Ive recently dropped quite a bit of body fat with the easiest diet ever. This is what I do:

B: Coffee + a piece of toast

Big Meal: Whatever I want (never fast food or anything too horrible)

If i get hungry I just eat a piece of fruit or make a veggie/fruit smoothie. Ive dropped almost 4% body fat this month doing this. Im not keeping track of calories but I make sure that my cals are around 1700 and more if i do a lot of cardio that day. Its amazingly stress free and your body adjusts to not being hungry until around the time you decide to have your big meal. Sorta like the Warrior Diet I suppose. I still have lots of energy and its fun to plan nice meals without worrying about every little thing that goes into it. I feel normal lol. Although since really sticking to my cut ive noticed a bit of a drop in strength but not much. I expected that since I took a 2 week break from heavy lifting to give my joints a break. I felt like I was getting a bit of tendonitis in my legs and hips.

Hope everyone is having a great day and is reaching their goals!!!

Carrot Cake Cookies

Monday, March 30th, 2009

OMG this is amazing. I Found this recipe and tried it last night. Its the perfect solution to craving carrot cake but in perfect portions. I couldn’t take pictures (they all got eaten very fast) so these aren’t mine but I recommend you try these and have friends over (to keep from eating them all yourself)
cookie

I didnt make the cream cheese frosting (they would of been too deadly) but it looked good:
1 1/8 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1/3 cup plus 2 tablespoons packed light brown sugar
1/3 cup plus 2 tablespoons granulated sugar
1 large egg
1/2 teaspoon vanilla
1 cup coarsely grated carrots (2 medium)
1 scant cup walnuts (3 ounces), chopped
1/2 cup raisins (2 1/2 ounces)
8 ounces cream cheese
1/4 cup honey

Put oven racks in upper and lower thirds of oven and preheat oven to 375°F. Butter 2 baking sheets.

Whisk together flour, cinnamon, baking soda, and salt in a bowl.

Beat together butter, sugars, egg, and vanilla in a bowl with an electric mixer at medium speed until pale and fluffy, about 2 minutes. Mix in carrots, nuts, and raisins at low speed, then add flour mixture and beat until just combined.

Drop 1 1/2 tablespoons batter per cookie 2 inches apart on baking sheets and bake, switching position of sheets halfway through baking, until cookies are lightly browned and springy to the touch, 12 to 16 minutes total. Cool cookies on sheets on racks 1 minute, then transfer cookies to racks to cool completely.

While cookies are baking, blend cream cheese and honey in a food processor until smooth.

Sandwich flat sides of cookies together with a generous tablespoon of cream cheese filling in between.

Update! + Haters

Thursday, March 26th, 2009

Hello everyone! I havent really updated since I left for Me-Hee-Ko but I have been sorta busy getting caught up with people, cooking, working out, etc. Ive switched to more of an IF style eating (inspired by WaveLength on bb.com!) and its working out great!! In 2 weeks Ive dropped 3% bf and feel awesome. I am learning how to make some real good Indian food, made my own Naan bread (will be posting soon as soon as I perfect the recipe a little bit) and Chickpea Curry. Im falling in love with how easy it is to cook Indian food and how amazing it tastes. Im a sucker for spicy food so expect to see a lot of indian dishes coming up.

I dont know what the deal is but whenever a person has success, there always seem to be those who try to bring you down. I think its a shame that some people feel the need to put someone down in order to make themselves feel better. Im just glad Im a strong enough person to take it with a grain of salt and move on.

This happens not only on the internet but a lot of people on here Im sure can relate to the ’sabotage people’ you encounter in real life that know you are trying to make yourself better, but offer you some cookies, or pizza anyway. "You work out a lot, you’ll burn it off fast, just one piece won’t hurt you, etc etc…" I always try to be polite and take a bite then put it away. I will not let them do that to me. Its just mean!! Anyone else have someone like this in their life?

Happy Thursday! Almost to the weekend!!

To San Diego, with love

Hey guys! Well didn’t get pics up of the bagels, my boyfriend ate them all before I could! lol whoops! Well thats what happens when you live with 2 guys! Food goes fast! Well last week was pretty much complete crap when it came to loosing weight. I didnt keep track of cals, ate crap, only made it to the gym 3 times because my hip flexor is hurt. Grah!! I finally had a decent cardio workout today, I ate really clean till tonight. Then I found out I got accepted to one of the law schools I applied to in San Diego! :-D !! Sooo I had a celebratory wine night!! Had a great time tonight and ready to get back on track tomorrow! :)

Bagels, 2nd try!

Friday, March 6th, 2009

Wow these turned out a lot prettier than the last batch! Ill get some pics after they cool off. I used the same recipe (as the other blog links to) but I did 1/2 all purpose and 1/2 white whole wheat flour and I looooove the texture. I love 100% whole wheat bagels but the texture is a little dense, I like my bagels more chewy/melt in your mouth sort of texture but with still some grain to it. This did it!! Not only was the texture of the dough a lot better but A TON easier to work with. It held its shape very well. Also I am curious to try this mixture with honey and skip the boil portion, make them into honey wheat dinner rolls :-D Ill have to try this very soon. Im in a baking sorta mood. Anyway, ill post pics in a bit. Im off to play some more Halo Wars <—awesome
