Awesome Squash Casserole Recipe!

My family makes this every holiday and I could seriously eat the whole pan of it!

5 pounds medium-size yellow squash
2 eggs, beaten
1 cup bread crumbs (Crushed Ritz crackers work well, or you could leave them out)
4 ounces (1 stick) butter (or I do  1/2 the amount of butter and replace with 1/8 cup olive oil)
1/4 cup sugar
Salt as needed
2 Tablespoons chopped onion
Dash of pepper
Cut tips off squash and cut each squash into 3 or 4 pieces. Drop squash into a large saucepan with enough boiling water to cover. Return to boil, reduce heat and cook until tender. Drain in colander, mash.

Combine with beaten eggs, bread crumbs, butter, sugar, salt, onion and pepper. Turn into a 3-quart casserole that has been lightly greased or sprayed with non-stick spray. Cover with a light layer of bread crumbs.

Bake at 350 degrees until lightly browned.

Serves 10

Enablers and I FOUND GOLD!

Well, I want to start this blog talking about Christmas coming up! The plan is to try and eat clean with minimal cheating, i am determined to do this! The only problem is Christmas Eve we are spending it over my bf’s parent’s house. Which isn’t a problem but his mom cooks the most delicious food (bad for you sweets, pies, etc) and I know she will tempt me. I feel guilty, like I said in my last blog if i dont eat it, and plus its so tasty, i want to. She always says "Well you guys run and workout all the time…so it wont hurt" *sigh* she doesnt understand I feel bloaty and fat whenever I eat bad. Anyone ever that family pressure to cheat?

OH! and I found the best grocery store ever!! Its a Mediterranean specialty store that has cheap pita bread (try 8 fresh made pita breads for 1.50!) Also awesome selection of lamb, my most favorite meat ever! Also I bought a bulk box of chicken gyro meat! So i can make healthy gyros whenever I want! Yum! So check in your area for those, you get lots of cheap healthy food! Oh yeah did I mention they have awesome selection of yogurt and tea!?

8:30am:Here is Today’s breakfast:

2 whole eggs
1 piece of ezekiel bread toasted
1 banana
1 tbsp ketchup

12:30:I plan on for lunch:

1/2 a pita loaf
4-5 slices of gyro meat
1/4 an onion sauteed
1 cup baby spinach
1/4 cup plain yogurt

2:15: 1 scoop ON whey, 1 cup chocolate soy milk. mmm

Have no idea about dinner. Might goto my parent’s. Ill try to stick to lean meat and veggies!

        1/2 serving of steel cut oats with a sprinkle of cinnamon and a tsp of honey.
        Hot Green Tea

-Mountain biking 2 + hrs-

12ish: Gyro Yum

I have no idea what else today, its my man’s bday weekend so im gonna try to keep it healthy, but it wont be ideal

Back on track and dodging cheesecake

The last couple days have been great, been eating healthy, working out. Had a great trail run on Wednesday in which I felt the best running I have in awhile, ran 2 miles (maybe more, trails are hard to measure) and didnt feel bad at all, i felt great!

My bf’s parents came over yesterday and we went out for dinner at a little vietnamese restaurant. I tried to order healthy, and ordered the ginger fish. It came with Veggies and rice, i planned on saving the rice and some fish for a nice preworkout/postworkout meal. When it came, it was fried fish! grah! I ate half and wrote it off as a cheat meal and saved the rest for breakfast this morning. At least id have time to work it all off. Then his mom made homemade lemon cheesecake and homemade chocolate truffles! I had a small slice last night to try it, it was deadly amazing and shared a truffle with my boyfriend. I mean it was all delish and I didnt want to make her feel bad that i didnt taste it, but its frustrating when you are trying to eat a certain way, especially during the holidays!

Any of you have the guilt card with food if you dont eat it?

Im sorta bummed because I wanted my cheat day to be Saturday, its my bf’s bday and I wanted to drink a little, i guess ill be super strict till then and have only one beer. Stella FTW!! Anyway, i dont feel that bloaty today tho, so hopefully i indulged with moderation. Im having my man take the rest of the sweets with him to work so they can enjoy the rest and I can stop staring at the cheesecake every time i open the fridge! Im going to lift some weights this afternoon and then go on a fun trail run! Hope everyone is having a great Friday!

The Holiday Slippery Slope

Oh man, last week was HORRIBLE as far as diet goes. You know how you are like "well Ive been doin well, i deserve a cheat meal…." Well it just kept goin down hill. Now I feel bloated, gross and ready to get back on track to what i felt like a week ago. I felt awesome, Im going to get back to it.

Started out:
Last Saturday:
-My dad came to visit, fridge was broken, went out for thai food
-My man’s business xmas party…I ate a big salad before, but I loaded up on the desserts there :(
Last Sunday: Had friends over, fridge was broken still, ordered pizza and made xmas cookies. (stomach ache)
Monday: Fridge got fixed, ate ok on what I had, had tofu salad for lunch and chicken breast sandwich for dinner.
Tuesday: Went out to get fish tacos for dinner, Roommate and Bf wanted it and its my one weakness.
Wednesday: ate ok
Thursday: Bf invited me out to japanese food. I ate bad but small portion and saved half my meal for dinner.
Fri: Partied, lots of wine
Sat: Partied….lol
Sunday: did a 5k (wow something healthy?)

As you can see i had one horrible delicious week but I feel HORRIBLE. I was feeling awesome but enough feeling guilty, cant change the past and now I am ready to get back on track and eat right. It just shows how easy it would be in a couple short weeks to pack on some serious poundage.

Today I have planned:

9am B: 1/4 cup rolled oats (uncooked, cooked its about 1/2 cup), 1 tbsp Natty PB, Cinnamon and a dash of raisins.
           Hot Green Tea, Multi

10:30am -workout- Thinkin of doin some serious super sets, Arms, Chest, Abs

12pm: Greek Salad: 2 cups Baby Spinach, 1/2 a Roma Tomato, Red onion, cucumber, 1 tbsp olive oil, lemon juice
                            3oz roasted chicken breast

3pm: ***e Yogurt and 1 tsp honey

6pm: I have my friend’s bday dinner, we are going to a sushi resturant so Im pretty sure I will order a couple pieces of sashimi and a seaweed salad. Im gonna stay away from rice.

8pm: Adventure race training? not sure whats going on tonight.  

9pm: If im still hungry, 1 scoop ONwhey and water

Im back! Moving, Thanksgiving, etc

I didnt have internet but really sparsely because i have been moving (into a house, finally :) ) and went to Arizona for Thanksgiving. It was lots of fun and now im back on a rigorous training schedule in which im seeing great results even thus far. Ill post some pictures soon, im a little bloated from making xmas cookies in which I indulged a bit :-P !! Just know ive been kicking my own ass, and my new roommate who is training for IronMan is also kicking my ass. Even if its 11pm and Im tired, he still makes me crank out some pushups,pull-ups and a 10 min ab routine. I hate it at the time, but you cant argue with results!!

I was doing great on the eating side of everything until our fridge broke! Get this: We move in and immediately go out of town, one week after we get back, the dishwasher is broken and our fridge stops working. :( pisses me off a lot considering I just spent 100 bucks on all fresh groceries, most of them will spoil. Grah! The guy is coming today to look at it but its such an inconvenience, especially when you want to eat healthy. Anyway hope everyone had a great thanksgiving and is having a great holiday :) !
