Citrus Honey glazed turkey

Hi yall!

 This is the recipe for the video series "Cooking CLEAN"- Enjoy!

Citrus Honey Glazed Turkeybreast

Citrus Honey Glazed Turkey Breast
 

Ingredients:

5 to 6 Lb. Whole boneless turkey breasts

1 (each) lemon, lime, orange

2 Tbsp. flax seed or olive oil

1 Tbsp. Chili flakes

1 Tbsp. Tarragon

2 Tbsp. Honey

Prepare marinate ONE day ahead of time to allow the turkey breasts to soak overnight in mixture.

Preheat oven to 325 degrees.  Cover marinated turkey breast with foil (loosely) and place in oven for 1 hour.  Make SURE you monitor the progress at 50 minutes to gage if you need to cook longer or not. 

While turkey is cooking, prepare the glaze:

In small saucepan bring the juice of one orange, one lemon and one lime (should be around ½ cup) to a boil.  Add the 2 tbsp. of honey and simmer to reduce to thick syrup like consistency.  Put aside and let cool.  After the 1 hour (maybe a bit longer) raise oven temp to 400 degrees.  Cook turkey for an additional 20 minutes at 400 degrees.  Glaze turkey (with brush) every 5 minutes for 20 minutes.

Slice and enjoy!

My nagging brain!!!

Ugh, here we go again.  Seems like right around that lovely time of the month, that little voice keeps making itself known.  You know the one, "why don’t you just take a night off", "you really deserve a brownie" or my favorite:  "You deserve a night out with friends at the local bar!"…  I have done SOOOO good at supressing this nagging voice until as of late.  My weight loss has stalled, My damn lower body is STILL holding on to fat AND my husband comes home in less than a month.  That is the most terrifiying since I am so worried I won’t be to my goal:  16% bodyfat. 

I know I have come a long way in a short time and I am grateful for all the knowlege I have learned BUT I want MORE!!!  Is this normal?  Or am I being a stupid girl? 

On a positive note, I posted my new cooking series:  Cooking Clean on You tube and had a guy in the UK who works for BBC email me on doing a 10 min. clip on Turkey (holiday type theme).  SO- That was pretty exciting!!!!  He is going to send me the final edit next week and I will post for you all to see!!!  I am going to make a Citrus/Honey Glazed Turkey Breast- CLEAN baby!

Baking day!- Waiting on good ol’ Ike!

Ok, so we have a hurricane moving to Houston.  Went to the gym, CLOSED.  Went to tan, CLOSED.  What the heck!  Luckily I have a home gym and a dog who LOVES to run!  Since I have so much FREE time on my hands today, I decided to bake up a batch of yummy protein bars to ship to my hubby in Afghanastan.  I figured these would be better for him than the junk I have been sending (homemade choc. chip cookies, peanut M&M’s, twizzlers) PLUS he comes home in a month so he will be a lean mean HOT machine! LOL

K, they turned out soooo good I wanted to share them with you!  Let me know what you think!

Chocolate and Banana Protein Bars

1 cup quick oatmeal (not instant)
5 scoops of chocolate protein powder ( 105g of protein)
1/4 cup fat free cottage cheese
1/2 cup non fat dry milk powder
2 egg whites
4 TBSP water
2 TBSP Organic Aguave sweetener
2 bananas, mashed
1 1/2 tsp. flaxseed oil (this is the secret to moist bars instead of the traditional dry bar)
¼ cup raw crushed almonds (sprinkle on top of bars)- prior to cooking

Nutritional Info

Fat: 10.1g
Carbohydrates: 20.6g
Calories:246.2
Protein: 27.5g
 

Preheat oven to 325 degrees. Spray a 9X12 casserole dish with PAM spray and set aside. In a medium bowl combine all dry ingredients and set aside. In a mixing bowl beat egg whites, cottage cheese, bananas, water, aguave sweetener and oil. Add just a tad of vanilla for flavor to the wet ingredients. Add the dry mixture and combine until a lumpy batter forms. Pour into pan and bake for 30 minutes or until edges are browned. Cut into 8 squares.

Number of Servings: 8

Baking during Ike

Ok, so I am REALLY bored waiting for this damn hurricane to pass.  Went to the gym and they were CLOSED.  Went to tan, yep, CLOSED.  Luckily I have a home gym and a dog who loves to run- lol- poor thing is WIPED out!  So, I decided to bake some yummy protein bars for my hubby!  I am going to send them to Afghanastan instead of cookies.  These are better for him AND since he is coming home soon, he will be a lean mean HOT machine- LOL. 

They turned out SOOOOO good I thought I would share them with ya’ll!

Ok, I think I may have mentioned that I do screenprinting of custom exercise wear?  Anhew, I have not done it for a few years and I have just relaunched it!  I am in the progress of setting up vendors and doing the screenprinting on the gear.  I am also getting some GREAT supplements that I use and LOVE and will have those available as well!

In addition, I am going to start taping my "clean" cooking video series and post those for all!  If you have information that is valuable, contact me!!!

SLOW to go!

Ok, I am really frustrated!!!  I am leaning out everywhere BUT my BUTT and lower body.  I know, I know, I am a woman thus this is where my fat wants to hold on for dear life, but COME ON!  Anyhew, I am not down any more weight and I am starting to stall a bit…  So, Rea has me calorie cycling on non weight days and weight days.  I will give this a few weeks and see how it goes.  I am keeping myself busy at the gym.  REALLY loving the HIIT days w/ the 4 day split.  I am also really liking the fast paced Mende circuit.  I usually do that on Sat.  I am debating if I should hit my legs 2X a week or just hang in there.  WHAT  DO YOU GUYS THINK???  I don’t want to overtrain them and stall my progress any more.

 

I am on the home stretch before my wonderful hubby comes home from overseas on Army leave.  SO- I am staying "clean" and working hard baby! 

Today was legs day.  I really like doing them on Sunday because there are not many folks there and I can do giant sets w/o anyone getting pissy.  I am digging the split squats on the smith, thanks Ms. Fitness for the great tip!  and doing about 6 exercises for them.  These include the split squats- 3 sets of 10 (weight increases of 10 lbs per set) to failure.  Leg presses on smith (laying on bench)- same as splits above.  I superset these w deadlifts on a bench w/ a 45 lb olympic bar.  After that, I move on to walking lunges.  3 sets of 15 w/ 45 lb bar on shoulders.  Superset w/ calf raises (3 sets of 15 to failure).  Moving along to the machines, I do extensions supersetted w/ seated leg curls - both 3 sets of 10 HEAVY.  Tonight I did extensions at 100 lbs (HOORAY!) and curls at 85.   I added 5 lb increments each set.  Worked them til they were shaking!  Moved to regular leg presses- 3 sets of 10 at 120 lbs.  giant set w/ add and abd machine (yep, 3 sets of 10- heavy to failure).

Whew, then finally cable glute extensions 4 sets of 10- 50 lbs.  At the end I started feeling it in my back, that is when I knew to stop.  Wrapped it up with my SS cardio- 25 minutes on stairmill and 15 min. high incline walk/jog.

THEN since my superpump was still pumping (lol) came home and did the yard!  Ok, well I helped as my son did most of it!  BBQed some chicken and vegis and hit the pool.  AHHHHHH  I love jumping in the pool after yardwork!

Tomorrow is my first day of coaching my little guys soccer team.  We have a sponsor this year so we are stoked!

Back from Labor Day LABOR in the Mountains

Howdy!  Just back from Big Bend National Park last night.  WOW- I had forgotten how beautiful nature is.  It is amazing how so many times we just take it for granted!  Any way, very memorable trip.  Since my hubby is deployed overseas, my in-laws came down to join my son and I.  My father in law is a BIG nature lover, he has hiked allot of places and really seemed to enjoy this one too!  We drove west and stoppped for lunch in Mexico- lol- what an experience!  Of course it was POURING rain, not just a sprinkle but DOWNPOUR!  So we had to stop and get some plastic tubs for our food (mine of course was tuna and my vegi mix!- my splurge was a few peppermint patties- VERY low fat and yummy!).  We pulled into our "hideout"- a local car wash - to weather proof everything.  As we headed into Mexico we were supposed to declare any food or animals- I FORGOT!  AND I had my puppy with us as well.  So after sloshing around in the rain, about 2 feet of it, we headed back out.  They asked if we had anything to declare and I said no.  He noticed our coolers and sent us to the agriculture folks.  SO- they looked through the cooler and explained that we could not take anything out that we did not declare and it was punishable by a $300 fine PER item.  They took my hard boiled eggs but let us keep the rest.  Thank goodness they did not try to take my dog.  They would have had to pry him from MY COLD DEAD HANDS!  LOL. 

We finally made it to the park and yep, it was raining and COLD!  By cold I mean low 60’s (yes that is COLD for us Texans!).  Since it was so late, we headed into the lodge and had dinner.  We hit the sack early and got up at dawn to hit the trailhead.  We wanted to hike Emory Peak (the highest peak in Big Bend).  Strangely we were the only ones on it!  We saw 4 other folks on our way down and THAT was it!  It was cold and about zero visibility when we hit the rest stop (about 1 mile from the summit) and the weather was so bad (fog, wind and rain) we decided to play it safe and head back down.  PLUS my son was complaining NO STOP so that was irritating too! 

We then went to an amazing natural mineral spring that was georgeous!  All and all it was a great trip.  Today was legs day and I worked them until I almost puked, the BEST kind of workout!

Hope you all had a great holiday and stuck to your clean diet!  I did, although it was difficult I hung in there!  I ate Oatmeal with a small orange and walnuts in the AM, protein drink for snack, small serving of almonds for snack and Tuna w/ vegis for lunch and chicken (grilled) for dinner w/ vegis.  I DID splurge after the hike and had 3 pepermint patties (snack size).  About 100 CAL.

 We hiked 4 hours and loved it!  It was a very active holiday hence LABOR day right?

Now off to the pool to hang and grill up some chicken and RIBS (for my inlaws) later.  I also made a cherry cobbler which I will NOT be partaking in however it smells awesome! 

WOO HOOO!  Go Willpower!
