Motivation is Back!

I have been really slacking lately on my workouts and even my diet. For the last 3-4 weeks I wsa fighting a flu then I had an injury and everything just kinda went out the window from there. Last night I went to get a new outfit for going out this weekend and that when my life came to a crashing hault…again. I am so sick of not being my old self! The old self who I thought was overweight and undertrained…I now long for those days of self pity. This week I have been starting up again and dusting myself off. Im getting pissed off when I hit the weights tho and I cant lift like I used to. I guess I just aslways have this little voice in the back of my head saying "If you stuck with it you could probably bench that" I only have myself to blame and yes maybe this is a pity party but I guess I have to write this down for it to really sink in this time. I not only want this lifestyle back…I need it back. So heres my new goal, go to the gym on a regular basis and give it 150% each time. I dont know how I fell out of something I loved so much and did without thinking but Im back now! Keep your eyes glued to this blog bc it will be updated with pics, supps and new workouts. Ive got 3 months to transform my body, think I can do it?

Antipasto Lasagna

1 (27.5 oz) jar organic low sodium ff pasta sauce
6 ww lasagna noodles
1 (14 oz) can artichoke hearts, drained and coarsely chopped
1 (7 oz) bottle roasted red peppers, drained and chopped
1 pound ground turkey, cooked and drained
fresh mushrooms, sliced
1 cup (4 oz) preshredded part-skim mozzarella cheese, divided
oregano (optional)

Preheat oven to 450 degrees
Spread 1/2 cup pasta sauce in bottom of 8 inch square baking dish coated with cooking spray. Arrange 2 noodles over sauce, top with half of artichoke, half of peppers, 1/2 cup turkey meat and 1/2 mushrooms. Sprinkle with 1/2 cup cheese, top with 3/4 cup sauce. Repeat layers, omitting cheese, ending with noodles. Spread remaining sauce over noodles. Cover and bake at 450 for 30 mins or until noodles are tender and sauce is bubbly. Uncover and top with 1/2 cup cheese, bake an additional 5 mins.

BBQ Chicken Burgers with Slaw

1 tbsp butter (i used olivio)
1 small red onion, 1/2 finely chopped, 1/2 thinly sliced
2 cloves garlic, finely chopped
2 tbsp tomato paste (look for lower sodium version)
1 tsp sugar
1 tbsp worcestershire sauce
1 tbsp hot sauce
1 1/4 pounds ground chicken
1 tbsp grill seasoning (use low sodium brand)
3 tbsp EVOO
2 tbsp honey
1 lemon, juiced
3 rounded tbsp sweet pickle relish
2 c shredded cabbage mix
add pepper to taste

In small skillet over med heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 mins to soften. Sprinkle in sugar and remove from heat. Cool in bowl, 5 mins. Add tomato paste, worchestershire, hot sauce to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors for form 4 patties.
Heat 1 tbsp EVOO over med-high heat. Cook patties 6 mins on each side.
Combine the honey, lemon juice and remaining EVOO in bowl. Add relish, cabbage mix and sliced onions and season with pepper. Toss the slaw to coat.
Serve burgers with slaw on top. Eat alone or on cracked wheat buns or low carb wrap.

Shrimp and Spinach

3 tbsp EVOO
2 cloves of garlic,  minced
8 oz sliced mushrooms
6 oz fresh spinach
1 pound uncooked, peeled shrimp
pepper to taste
red pepper flakes, optional
Heat EVOO in wide skillet over med heat. Add garlic, increase heat to high and add mushrooms. Cook 3 mins. Chop spinach coarsely, add to mushrooms stirring occasionally, cook 3 mins. Add shrimp, stirring occasionally until shrimp is cooked through, about 3-5 mins. Serve over ww pasta or brown rice.

Back in the game again

Things are going slow but steady. My weight loss isnt coming off as it was but I expected as much. My energy levels are getting better. I had a slight set back that required taking about a week off from the gym which hurt me but nothing I cant beat. I will be posting some really great recipes on here in hopes others will try them and love them as much as I do. I am busting my ass now tho, starting a new job in a few weeks so I gotta make the most of this time off. Thanks for all the support tho and I promise to stay up on this more often.

Day 4 of Diet

Well what can I say about this diet, its not horrible really. From the first weigh in to todays weigh in, Im down 4 pounds. Actually my baby is down 4 lbs too which is great. Im finding it is so much easier to do this with someone else. Yesterday was my first high day and I thought that would be the easiest but turned out it was the hardest so far. Im liking all the different recipes Ive been coming up with tho, Ill post a few sometime soon. All in all I like the energy Im getting, the foods Im eating and the weight coming off!

Diet

Today I started my carb cycle diet. Im doing Low, Low, High. So far its not going so bad. Not as hungry as I thought I would be and Im looking forward to Wed for my high day. Drinking tons of water and feeling pretty good. The last few days at the gym I have felt amazing. Getting in great workouts and slowly coming back to my weight I used to push. I have to focus on going strong and not worry about the fact that Im pretty much starting over again. It sucks but I am noticing that muscle does have memory and I cant wait to kick it into gear.
