Great Fish Recipe
Tuesday, January 8th, 2008I was watching the Food Channel while on the Elliptical and saw this "low fat" recipe on Paul Dean. I changed it to make it really low fat leaving out the 1/2 stick of butter (which is low fat for her) and changing the cheese.
Ingredients:
2-4 fresh fish fillets (tilapia, snapper, grouper)
1 yellow pepper and 1 red pepper chopped to 1/2 in pieces.
Parmesan Cheese
Olive oil
Salt and Pepper
Fresh green beans for steaming.
Preheat oven to 350. Spray bottom of baking pan with Pam or line with foil. Place chopped pepper on bottom. Put fillets over top. Brush with Olive Oil. Salt and Pepper.
Bake for 10-12 minutes until almost done. Remove from oven. Turn oven to Broil.
Begin steaming green beans in microwave.
Sprinkle parmesan on fish. Enough to give the fish a light coating
Return fish to oven and broil 2-3 minutes until the cheese is golden brown. Watch carefully so it won’t burn.
Remove from oven. Lift fillets out and mix the peppers in with the steamed green beans.
I have made this twice so far and love it. I had no green beans tonight so I grilled some zucchini on the George Foreman Grill and mixed the peppers with them. I make extra for additional meals.
