Healthy Recipe of the Week #31 Garlic Shrimp and Veggie Stir Fry over Wild

Garlic Shrimp and Veggie Stir Fry over Wild Rice
Ingredients:
6 oz. of peeled unfrozen .shrimp
½ clove of garlic
3 tsp. of extra virgin olive oil
1 cup of Japanese style mixed vegetables
1 cup of wild rice
½ tsp. of onion powder
½ tsp. of parsley flakes
¼ tsp of paprika
Directions:
In a medium pot boil wild rice.  Finely chop up garlic clove into tiny bits.  In small fry pan add olive oil and chopped garlic. Swirl the pan around so oil covers the entire bottom. Place pan on stove and turn to medium heat. Place shrimp in pan and let cook for 3 minutes. After 3 minutes flip shrimp and let that side cook for three minutes. Add in onion powder and parsley flakes and continue to stir for 5 minutes or until shrimp become nice and pink. Remove shrimp from the pan but do not scrape the pan. Return pan to stove and add in veggies. Sprinkle in paprika and continue to stir. Take cooked shrimp and add it back into the veggie stir fry.  Plate up rice and add shrimp and veggie.

Healthy Recipe of the Week#30 Snickers Style Protein Shake

Snickers Style Protein Shake
 

Ingredients:
1 ½ scoops chocolate protein powder

1 cup fat free milk

1 Tbsp. finely crushed peanuts

1 Tbsp. sugar- free caramel topping

1 Tbsp. Smuckers   Milky Way Topping Ice Cream Topping

*2 ounces of cold water (for thinner shake)

Directions:
In a shaker cup add 1 cup of fat free milk. Then add 1 ½ scoops of chocolate protein powder and shake vigorously.  Add in 1 Tbsp of Milky Way topping and finely crushed peanuts and shake for one minute and enjoy.

*If you want a thinner shake add 2 ounces of water as a final step.

Serving size:8 oz. *10 oz. with added water

Calories: 481

Protein: 49 grams

Carbs: 39 grams

Fat: 12 grams
