Healthy Recipe of the Week #10

Stir Fry Turkey Strip Salad
Ingredients:
6 oz (165g) (raw weight) boneless, skinless turkey breast
2 tsp olive or canola oil
1 clove minced/chopped garlic
1/4 tsp paprika
2 cups (5 oz/140g) lettuce (Cos/Romaine are best)
1 cup (4 oz/110g) sliced cucumber
6 cherry tomatoes
1 tbsp reduced-fat dressing
1 tbsp pumpkin seeds
Recipe Instructions
1. Cut the turkey breast into thin strips and sprinkle with paprika.
2. Heat oil in a non-stick skillet/pan, add minced garlic and sauté.
3. Add the turkey strips and cook quickly turning all the time, for 4-5 minutes.
4. Mix together lettuce, cucumber, and tomatoes in large bowl
5. Add the turkey strips to the mix and sprinkle with pumpkin seeds.
6. Sprinkle reduced-fat dressing over the top and enjoy.

Turkey BLT Wrap

Ingredients

·  1 Tbsp. fat-free mayonnaise

·  1 whole wheat tortilla

·  3 slices turkey bacon, cooked

·  3 ounces roast turkey breast, diced

·  2 slices tomato

·  2 leaves lettuce

Directions

1. Smear the mayonnaise on the tortilla

2. Line the middle of the tortilla with the bacon and top with the turkey breast, tomato, and lettuce.

3. Roll the whole thing tightly into a tube.

Makes 1 Wrap

Per wrap: 260 Calories, 22 grams protein, 24 grams carbohydrates, 7 grams total fat, 1 gram fiber.
