Today's Positives:



  • Took a 2.5 mile hike with son Chris
  • Laid out on the deck for a couple hours
  • Boiled eggs
  • Cooked 7 pounds of chicken in crockpot
  • Cooked 4 pounds of lean ground beef
  • Weighed and bagged almonds
  • Made almond butter and bagged servings
  • Made peanut butter with unsalted peanuts
  • Made chicken enchiladas for the family
  • Made peanut butter mousse for the family
  • Took a hot bath
  • Watched a great independent film "I Hate Valentine's Day"

I am blessed, beautiful and beloved.


Today's Positives:



  • Went to the Farmer's Market with hubby
  • Hiked Mt. Helena with hubby, one hour and 25 minutes around the whole mountain with at least 6 switch backs up the mountainside.
  • Ate my meals
  • Took my supplements
  • Drank plenty of water
  • Took a second hike with son Chris for 50 minutes this evening
  • Took a 30 minute nap
  • Fixed the kids quiche for dinner with turkey bacon, reduced fat cheddar and nonfat half and half.
  • Got 8 1/2 hours sleep last night

Straight From Wendy's Kitchen

Homemade Egg Drop Soup


2 cups low sodium chicken broth


3 whole eggs


1/2 t lite soy sauce


1/4 t hunan chili paste


Dash of parsley


Poach eggs in boiling water. Heat up chicken broth. Add poached eggs to chicken broth. Add parsley, chili paste and soy.


Serves 1.


230 calories


2 grams carbohydrates


16 grams of fat
