The only thing I can figure about my gain (and loss!) was I was donating plasma for the last month and I was so fatigued that my usual calories burned was just not happening. I have stopped donating plasma as of now. Until I get a better grip on my diet….Which is happening now as I have decided to enter the Emerald Cup in april! 19 weeks out  and busting my butt on the real!!!!!! Although right now I am busting my butt to clean my house after my children so lovingly enjoyed their time playing…with everything!

Something is wrong!

Well I don’t know what is going on with me. I have been Really watching my diet , calorie intake, fat and carbs. I’ve been as active as I can be and within 1 month, I’ve managed to gain 10 pounds!!?  I have serious fatigue most days and just feel….odd. What gives?  I don’t believe I’m pregnant. This is really frustrating. I’ll be having my blood tested to see if my thyroid is ok among other things. uuugggggghhhhh!!!!!!!!!!!!!

OMG! My hip

Yesterday as I was picking up around the house and bent over and suddenly I had the worst stabbing pain in my hip and when I stood up I could barely keep my weight on that leg, I had to lean my weight to the other leg/hip and for the next hour it felt that any moment my hip would pop out of joint, it sorta felt like it was inbetween. It was horrible! At that moment I realized I had to start taking care myself . I am not even thirty and I have joint problems and circulation issues. My grandmother has had several knee replacement surgeries and several other family members have had hip problems. I feel really challenged to change the course of my health. I think swimming would be the best option as I increase my ligament health.

Low Fat natural Cheese-Check!

Frozen Peaches and strawberries-Check!

And theres more but HOLY COW I am run down shopping , my cart was full and I was smart with my purchases. My childen got Suger Free Quik, Suger free raspberry preserves and freeze dried fruit!   What a great time at Wally World!

Spicy Peanut Sauce Lettuce Wrap

So I found this in Muscle and Fitness Hers and  I LOVE this stuff!

1 carrot

, shredded
½ cup bean sprouts
½ small cucumber, cut into matchsticks
3 green onions, sliced
1 ½ cups cooked jasmine rice
7 oz. (½ package) light firm tofu, drained and cut into matchsticks
12 Boston lettuce leaves
12 tsp. low-fat, low-sodium bottled peanut sauce (such as Mr. Spice Thai Peanut Sauce), divided, plus extra for serving

Directions:
1. Combine carrot, bean sprouts, cucumber, green onions and cilantro in a medium bowl. Divide vegetable mixture, rice and tofu evenly among lettuce leaves. Drizzle filling with 1 tsp. peanut sauce, each.

2. Fold the top and bottom of lettuce leaves, roll and place seam-side down on a serving plate.

3. Serve with additional peanut sauce for dipping, if desired.

NUTRITION FACTS (per three-roll serving): 158 calories, 8 g protein, 24 g carbs, 3 g fat, 2 g fiber, 3 g sugar, 345 mg sodium
It’s def got a bite but its really tasty!   If you don’t like tofu I think chicken would work fine!

Frozen Blueberry slurpee!

2 cups frozen blueberries

1/2 cup any juice ( I used Apple Cherry)

Half cup additional fruit (pineapple, oranges, rasberries)

I sometimes add 1 scoop of my favorite protein powder for chocolate blueberry treat!
Blend for 5 minutes to get the blueberries nice and smooth…Ohhh this is a good thing!!!!

The "pain" of being overweight is really starting to dull the taste of food.  I know in my heart I can have a fine body. It’s my freakin choice!!!!!! So whats my next choice? my next choice is to eat for my health not just what sounds yummy. My other choice is keep moving. No one ever travels anywhere else without moving forward.    I look in the mirror and I want my reflection to be healthy , happy and yeah, I want hot legs and a small waist! But damnit, why not! I can’t wait for everyone else to come to My bodyspace  to see how I am doing and get inspired by me…little ol me!  :)   oh this is it!!
