Miracle Noodles

I'm really into Miracle Noodles right now.  I like the Angel Hair as it tastes exactly like spaghetti to me, didn't like the fettuccine too much but I want to try it with tuna & peas.  The rice was good too!  These products are made from shiratake root and have NO calories, fat, carbs, gluten, sodium and low GI.  They definitely fill you up! So far I like the angel hair best marinated a pan with chicken, tomatoes, Mrs.Dash tomato basil garlic, fresh garlic, pepper, NuSalt substitute, zucchini, bell peppers, onions & vinegar (white wine/balsamic/red). The rice is good cooked w/veggies and turkey in a low-sodium 5cal chicken broth. You can also use chicken, miracle noodles, stir-fry veggies, rice vinegar, low sodium soy sauce, and peanut butter for a fun Thai treat. I think I'm a little bloated after eating these tho, so I won't be consuming them before taking photos/day of competition but they are an amazing option for low-carb/calorie eating!!

Time Savers

One of my biggest challenges right now is TIME (getting more of it, managing what I have, staying organized, being focused as I am a little ADD, meal prep/scheduling and getting in all my workouts).  Today is my cooking day, I love to cook :) but prepping for this bikini show means eating almost the same things everyday!!  Trying to be creative with spices and utilizing calorie free food, but it's definitely not as fun as having the freedom to cook with more ingredients.  Back to TIME...see how easily I get distracted ;) so today I made the move to buy all pre-cut/washed veggies so all I have to do is cook/prep my protein.  I also bought disposable pans for cooking meat (50cents each) and another rubber non-stick muffin tin (these are THE BEST for cooking my egg white muffins as they pop out & clean up way easier than the metal non-stick pans, just set your oven for 400deg & viola).  I top the muffins with NuSalt Substitute, Pepper plus Mrs.Dash Fiesta or Tomato Basil Garlic or Tumeric.  And sometimes I add in a little sugar/salt-free Pico de Gallo from Whole Foods or Trader Joe's Fireroasted Peppers & Onions. Microwave for a minute or warm in the oven and it's a quick breakfast/night snack. 


I am also really in the habit now of cooking all my meals for the week on one "Cooking Day" (and measuring/portioning out in baggies 4oz meat quick packs & 30cal egg muffins...3days worth for the fridge & 4days worth in the freezer).  This is really helpful and I plan on continuing this method after all my training is done. If I don't prep all my meals the night before for my cooler the next day I just feel too tempted to add in extra calories and I'm on such restriction right now coming to these last couple weeks before the show that I have to have everything organized and ready!!  Another great tip is to pack one extra meal in your cooler than you think you will need that way you won't have to rush home if you run behind, or worse have to scramble and grab something from a fast food place.


Another time-saver for me right now is setting out my workout clothes the night before & everytime I change out of workout stuff getting everything reorganized, recharged & ready for my next workout.  


Glad I made the move to pre-cut/washed veggies today & added in the disposable cooking tins, this will definitely be something I continue to do in the future.  Still looking for more opportunities to save time in the kitchen & the gym, let me know if you have any good ideas to share!!
